Maybe I’m misunderstanding, but you backstab with R1 not R2. It’s all about practice. Too early and you do a normal R1, too late and they will begin to turn around (even if you are completely silent). It’s a fine region somewhere between arm‘s length and butt-hugging length.
I usually do 2 backsteps to set up the R1 that turns into a running attack, for the sake of safety. Never for actual evasive maneuvers (since you need better timing than mine to not get stun locked) I'd really like to see some dark souls pvp tournaments that are held in a local area network, for practically 0 lag :D.
Not being able to do a backstab is either player error, or an enemy that can't be backstabbed. The backflip has to do with the weapon he's using. All the classes are the same, aside from what they start with.
Unlike in DkS1. I've played long enough to confirm that you can backstab while holding the shield up. The button is the same as for the standard light attack btw. If you see a backstab fisher you need to understand the way he wants to play. If he wanna poise backstab you equip an hand axe(i understood you have a strenght build). It is a sort of falchion and you can prevent the damage. You can also kick your opponent and get a backstab. If you equip DWGR and a lance you can counter the backstab in this way.
